What would be the average concurrent users can support on VMWare ESX, with 1GB RAm and average page load under 3 seconds?
Any hint or info on this would be great. I would like to support up to 500 users, with 20 concurrent.

Missed your question. :(

The load you're specifying should be easily taken by your config. To be sure just use a load testing framework like JMeter or Apache's own commandline one.

Make sure your users are on a fast browser like Firefox 3.x or Chrome.

If you had more concurrent users (that's really always the issue in any system, not the total) then I would suggest the ZeoClustering model and with it you could scale as much as required. But 20 concurrent should work just fine, out-of-the-box.
